Quick Grilled Pizza from Cook's Country magazine

My blogging colleague, Hopsy @ Kappa Prep, and a new friend, Wears With Heels saw me post my dinner on Twitter and wanted the recipe, so here is my information on it!



Tonight, M and I each got to have our own 12-ish" pizzas, based off of recipes for dough and sauce, from Cook's Country magazine (the same people who do America's Test Kitchen on PBS on Saturdays). The issue is their August/September 2010 edition, which may still be on newsstands (I always see it most prominently displayed at Whole Foods), but we subscribe to it.



This recipe says the dough makes 4 nine-inch pizzas... but we like our dough a little on the thick side so keep that in mind.

Sauce:
2 (14.5 oz) cans of diced tomatoes. We like the brand San Marzano, or Cento if we are in a bind.
2 tablespoons of fresh basil, chopped
2 tablespoons of EVOO
2 minced garlic cloves
1/4 teaspoon of salt (not sea-salt, unless ground up finely)

Pizza:
about 2.5 cups of all purpose flour
1 cup of water, at 110 degrees
1 tablespoon of EVOO, plus extra set aside to brush dough on the grill (we use a silicone brush when brushing dough since it is so sticky at first)
1 tablespoon of sugar
1 envelope of rapid-rise, or instant, yeast (1 envelope = 2 1/4 teaspoons). We tend to use Fleischmanns. Also, make sure the date on it is good, otherwise it is a waste!
1/4 cup of grated Parmesan cheese
1 teaspoon of salt (not sea-salt, unless ground up finely)
2 1/2 cups shredded mozzarella cheese


1. Make sauce: combine tomatoes, basil, oil, garlic, and salt in medium bowl. We like to place it in a small saucepan on the lowest setting to warm it up.

2. Prepare dough: Whisk water, 1 tablespoon of EVOO, sugar, yeast in large liquid measuring cup. Let it sit 5 minutes (this prevents the need to use baking powder, lightens the crust and prevents dough from being gritty). Pulse flour, Parmesan, and salt in food processor until combined. With machine running, slowly pour in the water mixture and process until dough starts to pull away from the sides and forms a shaggy/hairy ball (normally takes us about 1.5 minutes). If your dough is coming off sticky, gradually add flour in. Flour a clean work surface and take out the dough, kneading it 3-4 times until it becomes cohesive.

3. Shape pizza: Line rimmed baking sheet with parchment paper and dust with flour. Wax paper is okay, but know that the dough will stick to it if not floured enough!!! Divide dough into 4 equal pieces (M and I did, again, two pieces). Work with one dough piece at a time, using a rolling pin, pressing dough into a small circle, and stretch out. Transfer to a baking sheet and dust with flour. Repeat with each dough piece, and you can just stack them on top of each other, divided by the floured paper.

4. Heat grill: Meanwhile, heat your coals. Or turn on your gas grill. We use a classic charcoal Weber dome grill. Just be sure to set your grate in place, and heat your grill -covered- with lid vent open completely for 5 minutes. You want there to be a cool spot on the grill and a hot spot for cooking. Also, be sure to scrape and oil cooking grate so dough doesn't develop burn marks too charred, and prevent sticking.

5. Grill pizza: Brush tops of dough lightly with EVOO. Peel off of parchment and place, oiled side down, onto the cool side of the grill. Grill pizza covered until sides are spotted with a golden brown, which may be easily found by lifting the sides and finding firmness with your tongs. The tops may develop bubbles, which is normal, but be sure to poke the larger bubbles (but not enough to tear all the way through the dough!!). Brush the uncooked side facing up with EVOO and flip with tongs. Top each with sauce to taste, and the mozzarella cheese. If you want additional garlic like I do, this is where I added it. I added the sauce, then the crushed garlic, then the cheese. Cook for at least 1.5-2 minutes. At this point, feel free to move pizza over to the cool side while adding your toppings. Then you can move it to the hot side to crisp up to taste.

Tips from our experience:

*It is better to have a thicker pizza than a thin pizza when grilling. You can completely destroy a pizza in less than a minute if it was too thin when placed on the grill. Likewise with fire temperature. If cooking with coals, feel free to cook down the coals to a fine gray ash on the tops of them.

*M likes Boar's Head pepperoni, which comes in 6-ounce containers. He got about 3 ounces on his pizza, because he likes to layer the edges together.

*Don't move the dough until it starts to firm up on the grill, or it will tear, and then you have to deal with charring.

*I kept my pizza dough warm in the microwave. But for a crisp crust, a warmed oven may be a better bet.

*Make sure you have a plate, platter, or cookie sheet to set a finished pizza on while outside grilling, otherwise you may burn it just by running in to grab something!

*I enjoy my pizza with prosciutto, pineapple, crushed garlic, bacon leftover from this morning's brunch, oregano and heirloom tomatoes.

My dear Hopsy was on the Martha Stewart Show. Now, I don't mean just as she had previously stated, i.e. getting a ticket on the show, I mean she was interviewed!!! And had a front row seat!! GAHHHHHHH It's every girls dream!! [and hosting the Meet and Greet at the Lilly Pulitzer Madison Avenue Townhouse]

Darling Hopsy!! and Taking Any Questions You Have!



Oh, this reason is exactly why I love to blog!! Wonderful, generous and all-around perfect Hopsy at Kappa Prep has so much in common with so many of us Conservative preps out there! I almost died when I read this entry, in which she said:

Belle-Pink Cupcake asked what my dream car is.
"Gosh, this can sort o of change from week to week. It also depends on what stage of life I am in. I mean I love my little Volvo right now, but am debating on upgrading to a smaller Mercedes or the Volvo SUV in a few years. I love the way both type of car drives, so smooth and and easy! However, it will all depend on where I am in life. If I can see myself closer to starting a family I might lean towards the Volvo SUV, but if I am still a happy single girl the Mercedes is the way to go. Then, after having a few little ones I would LOVE a navy Range Rover or Mercedes station wagon (so very mommy!)."



And I couldn't agree more with her choices! Smart, efficient, etc. As I told PBF the other day, I am ALL over the Navy Range Rover for an active family car. "If the Duke of Edinburgh can be an environmentalist and drive one, so can I !!!"


I am so totes inspired! I know she is followed by a GAZILLION more people than I am, but I am flailing about for inspiration of posts to write. Fashion Week has come and gone, and I am busy with school, as usual, and hope to catch up next week during our Spring Break. However, I would LOVE to answer any questions anyone has for me - I think it would be fun. I am no longer concerned with anonymity at this point, as clearly some people who read this know me...

So Many Things

First off - Happy New Year! Late by over 2 weeks, I know, and don't hate me. I hope my readership hasn't completely given up on me! I hope all is well for everyone out there, I am trying to decide whether I will do one post or multiple posts just to save everyone from dealing with LENGTH!

As you all know, I LOOOOVE Gossip Girl - and I love Nikes - so, natch, this viral ad is so awesome!


I know I have some fellow post-Nsync tour days Britney Spears fans here - --- not sure if anyone heard about how her song "If You Seek Amy" could be submitted to radio stations after the FCC was done with it ...btw, anyone else think this is silly? She doesn't actually say F.U.C.K. M.E.? Are kids really this smart these days (that is the ones who aren't already taking sex ed classes?)


Haha. I love Jossip! "O Faces of National Anthem singers for the Super Bowl" ...I think the best one is JoJo, for one, because she must've been someone who used to exist in the pop world (i.e. 1997-2005) - and because I cannot even think of a song that she ever did. Anyone got any info on JoJo for me? Gracias chicas!

Now, I don't talk politics a lot, but does anyone else feel insulted about all of the hootananny over this President-Elect? Does anyone even remember there previously being a President-Elect seal/sign on podiums? Does anyone remember there being so many special inaugural... whatevers... for all of the other great Presidents before our time and even to the present? Teddy, FDR, or whomever. Now, I think, Obama has even surpassed Kennedy - who had at least actually spent some time IN THE OFFICE - before people started fainting over his existance - and I find that offensive. However, let me conclude by saying, America spoke, and a majority of people found him to be the right candidate. I just am anticipating to see what it is he will do for all of us!

Please provide my girl Hopsy with some input on her jewelry case situation!! I told her I think her even wanting one is a great idea. It is such a tradition that has been forgotten. My Mom has several, one just for costume jewelry, and it is a big vanity - 3' tall! Yeesh! But def. fun for me to pick through when designers come up with accessories for the seasons. I "borrow" from MaMa!!

Does anyone else find it insane that Oprah, with all of her money, personal chefs, trainers, etc, cannot get the means to keep off at least most of her weight?

I already know about FOUR weddings occurring this year - on my calendar. HOLY CRAP!!! For real? This is totally crazy. I cannot believe that I already have 1/2 as many as I did for the total of 2008. I am afraid! Gah!

Speaking of weddings, does anyone have any input for my GF Muffy Martini? She is going crazy dealing with her invitations issue!


Shoot me now? And doesn't the "Mom" in this ad look like Lady Ferguson?? LOL

After reading Hopsy's latest blog entry, my heart has just felt so full and grateful.
Yes, "tis the season to be jolly" - but isn't it also the season to GIVE and LOVE? Hopsy really showed her good colors as she thought about others this weekend and even spent some extra money on Toys for Tots. I am so happy to have friends in the blogging world like this Lady. People are in need right now, genuine need.
On Thursday, over 20,000 Americans lost their jobs. 21 days before Christmas (and other respective holidays, of course). Can you imagine? It made me almost physically sick. And that wouldn't even include the small firms that don't get picked up by Bloomburg and CNN. Ugh.
And so this happened on Thursday and then on Friday I went to the Red Door Spa. Yes, it was an early Christmas gift from Michael, and it was lovely. Massage and Manicure. It was a big gift of LOVE from my LOVE, and I walked out feeling better than I had in months. I had been to the doctor what - 4 times in the past 6 weeks. And been in the hospital, too? Of course I needed it.
So this is what I decided...

1. Take more time for myself. Instead of drinking too much wine and booze. Buying lots of shoes I DO NOT need, and eating sushi from Teeter like 2x-3x a week some months for lunch... do better things. Drink more water. Get a massage - it's good for the body and the soul and can get toxins out of your system. Exercise as regularly as I should - doctors say that will make a good bit of difference on my chest problems. Don't bring work home with me, whether it be literal work, or if it is negative thoughts about my day at work.

2. Take more time for others. See what the local churches do for charities. I am still a member of the church I grew up at in Lexington - because it is the most important place to me - but that doesn't mean I can't go more frequently to other places closer by and HELP. Habitat for Humanity, Salvation Army, etc etc. I am sure there is something more I could do on my weekends besides cook for Michael and I, and study for school. I do meditate, but I want to do something more hands-on if possible.

3. Give more for others. I've already made some donations -monetarily- to token charities - one of my Chatham Hall classmates participated in the St. Jude Memphis Half-Marathon over the weekend - so I gave to that for her, because that is such an amazing thing to do... I do donate to my alma maters - Chatham Hall, Camp Seafarer, and Randolph-Macon College --- and to organizations I think truely make a difference while sharing my personal beliefs - Ducks Unlimited, the Nature Conservancy, Chesapeake Bay Foundation... but I am sure there is more to the big picture that I just haven't come across yet.

These are my new years resolutions. Thank you Hopsy for inspiring me!!
